Fleur de sel must be harvested every day from the water’s surface to give it its distinctive delicate texture. The flower of salt is then sent to be packaged. As a result, the finished product is identical to what the salt harvester (or “paludier”) originally produced.
It is best to add this salt as a garnish or seasoning and not during the cooking process to preserve its delicate taste. Natural, using no additives, and loaded with minerals (magnesium, calcium, potassium, and trace elements), this certified kosher Guérande salt has a great flavour without bitterness.
Due to its harvesting on a clay background, its crystals are grey, friable, wet, and perfectly assimilable.
