The garlicky aioli is a fine accompaniment to an array of dishes, such as a seafood platter or simply cooked fish. Aioli originated in Provence, home of the traditional platter of salt cod, vegetables and eggs, known as ‘le grand aioli’. The spicy and garlicky rouille is a classic garnish for bouillabaisse, the renowned Provençal fish stew. It is also great with lobster bisque, a grilled or pan-fried fish such as sea bass.
