Saint Nectaire cheese, from the heart of Auvergne in France, is a gastronomic delight that marries tradition with exquisite flavour. Crafted from the finest cow’s milk, this semi-soft, washed rind cheese embodies the essence of its lush surroundings. Its creation involves a meticulous process, beginning with the gentle pasteurization of fresh, high-quality milk from native Salers and Montbéliarde cows. Traditional rennet initiates coagulation, and the resulting curds are carefully hand-cut and moulded before a brine bath enhances the rind’s formation.
Aging in controlled cellars for weeks to months results in a rind that boasts earthy hues, while the interior reveals a supple paste ranging from pale ivory to yellow. The flavours are a symphony of earthiness and nuttiness, accompanied by a subtle tang that deepens as the cheese matures. When young, Saint Nectaire’s creamy character delights on cheese platters with fruits and bread. As it matures, its versatility shines, melting beautifully in various dishes.
We always aim to send out products with the longest best before date possible, and you can expect 4 days as a minimum when you receive this product. Many of our fresh products will have a shelf life that exceeds this, so please get in touch if you’d like up-to-date information on our current stock. Our chilled products will be sent in temperature-controlled packaging with enough ice packs to keep them cool in transit for up to 72 hours.
