This is a soft, unpasteurised, raw milk cheese with a bloomy washed rind and a filling of wild garlic. The earthy flavours of wild garlic, alongside the mushroom flavour of the rind, make this cheese a staple for your cheeseboard. Wild garlic, also knowns as ‘ail des ours’ or Bear’s garlic is found in various regions of France, including the forests of the Ardennes, the Pyrenees, and the Alps. It has a taste similar to both garlic and onion, with a subtle hint of bitterness.
Founded in 1886, Fromagerie Renard-Gillard produces prize-winning Brie de Meaux at their site in Biencourt-sur-Orge in Meuse, north-east France. This quarter-wheel of Brie can be eaten sliced in baguettes, or simply on its own. If you have the patience, let this ¼ wheel of cheese come to room temperature before serving.
