Think of French cheese and you’ll often think of Brie de Meaux: a rich raw-milk cheese with a bloomy washed rind and a wonderfully gooey interior. The taste is creamy and quite subtle, with just a hint of mushroom flavour from the edible mould on the rind.
Founded in 1886, Fromagerie Renard-Gillard produces prize-winning Brie de Meaux at their site in Biencourt-sur-Orge in Meuse, north-east France. This quarter-wheel of Brie can be eaten sliced in baguettes, baked in the oven or simply on its own. If you have the patience, let this ¼ wheel of cheese come to room temperature before serving.
