Munster AOP is a soft washed rind cheese with a delicate flavour that is created mostly from milk produced in the Vosges area of France, which is between the Alsace-Lorraine and Franche-Comté provinces. Munster, like other washed rind cheeses, has a slightly damp red coating on the rind due to numerous washings. In addition to protecting the cheese, the rind imparts a powerful, deep scent and acidic flavour. The term “Munster” is derived from the Alsatian town of Munster, where the cheese was stored and aged in monks’ cellars in abbeys and monasteries.
The term “Appellation d’Origine Protege” (AOP) which translates to “protected designation of origin,” is a mark used in France to identify agricultural products whose stages of production and processing are carried out in a specific geographical area, the “terroir”, and using recognised and customary know-how.
