The smoked trout in this classic recipe comes directly from the ‘in-house’ smokery: Le Père Eugène is part of Le Grand Lejon, the last remaining traditional producer of salted and smoked fish in the port of Binic on the north coast of Brittany in France.
These French smoked trout rillettes also feature salmon, crème fraîche, lemon juice, mustard and subtle seasonings. A delicious topping for toasted baguette or crackers, for a rustic and simple light meal.
