These delicious rillettes are made with salmon, smoked salmon, crème fraîche and lemon juice.
Spread on thin toast or blinis for a tasty appetiser, or serve with smoked salmon slices, lemon wedges and dressed salad leaves for a starter or light lunch.
Rillettes are more typically made with shredded pork and the texture can be described as mid-way between a smooth pâté and a terrine.
