An iconic dish from the south-west of France, cassoulet was originally the food of peasants. La Belle Chaurienne are based in the ancient French town of Castelnaudary, where it is claimed the citizens of the town gathered up all of the ingredients they had to hand and created this stew to sustain their soldiers against the attack from the British during the Hundred Years War.
