Duck meat, Toulouse sausages, and lingot beans are used to make this duck cassoulet.
Warm gently in a saucepan or lightly brown on the grill before serving with crusty French bread or mashed potatoes and seasonal greens.
Cassoulet is said to have originated in the town where La Belle Chaurienne is located, Castelnaudary, south of France, during the Hundred Years War in France.
