Jesus de Lyon is a coarse-textured, pear-shaped, dry-cured salami. It takes its name from the fact that it is a French speciality of Lyon cuisine originally prepared at the end of the year, to be ready to be eaten at Christmas to celebrate the birth of Jesus. It is best to store the saucisson wrapped in a cloth in a cool, dry place.
