Crepes Gavottes are feather-light, crispy, buttery, caramelised biscuits based on a recipe that dates back to 1888. The original gavotte was made by accident in Brittany, France, by Marie-Catherine Cornic, who left one of her crêpes cooking on the stove too long. She decided to fold and roll it up to eat it and was delighted by the light and crispy texture of the biscuit. And so, the crepes dentelle Gavottes were born!
These French biscuits are delicious whether eaten on their own, with tea or coffee or as a garnish for ice cream.
If you would like to use them for baking, simply crush the wafer biscuits to get small flakes (also known as paillete feuilletine) and mix with chocolate or praline to get a crunchy layer in your cake.
