A gamay saucisson is a type of dry-cured meat sausage flavoured with gamay red wine. It has a rich, slightly fruity taste from the wine, complemented by traditional sausage spices.
To enjoy this saucisson at its best, just slice it! Peel off the bloomy rind (depending on taste) and enjoy it with fresh French bread, or on its own with a handful of cornichons. Whole saucisson sec keeps extremely well in your kitchen cupboard but should be refrigerated after cutting. For optimal flavour, let it come back to room temperature before serving.
