The olives are wonderful on their own, in salads or as part of an apéritif spread or tapas evening. You can also chop them finely and mix with a touch of olive oil for a spicy tapenade that’s perfect on fresh baguette. Once open, you can keep these olives in the fridge for 14 days in a suitable container – to get the best of their flavour, just let them come to room temperature before enjoying.
