Made using a centuries-old recipe, calissons blend ground almonds, candied fruit (typically melon and orange), and sugar into a smooth, fragrant paste. This mixture is carefully rolled out and cut into distinctive oval shapes, reminiscent of an almond or a boat. Each piece is then delicately coated with a thin layer of royal icing, creating its signature glossy finish. The calissons are gently dried in a low-temperature oven to enhance their flavours while maintaining their soft yet firm texture.
