Compared to the smaller non-pareil and capote capers, capucine capers are larger and have a slightly milder and sweeter taste. But they still pack the distinctive fragrant punch that makes capers such a great addition to many dishes.
Pairing famously well with fish, these capers also bring a new dimension of flavour to pasta and vegetable dishes, Mediterranean tomato sauces, and salad dressings. They are also an addictive cocktail snack all on their own. You just need to drain them before use – rinsing is a matter of preference.
