Cancoillotte is a runny French cheese made in the Franche-Comte region, and one of the must-try cheese from the Jura mountains. Wine from the area has been added to this cheese to add extra flavour.
Produced with cow’s milk, this cheese is made from “metton” (skimmed raw-milk curd), making it lower in fat than other soft cheeses, although butter (and salt) is generally added after the cheese has been gently melted over a flame.
