Agour’s Le Saint Sauveur ewe’s cheese, named after the chapel that towers over the Iraty dairy deep in the Basque mountains, is a soft cheese with a bloomy white rind. Its texture is very creamy with a slightly sweet flavour. Slice and spread on crackers, a crusty baguette or add it to a cheeseboard with other Basque cheeses from Agour. Made from pasteurised sheep’s milk.
Agour and Baillet, though distinct, share a common mission of preserving Basque culinary heritage. Agour’s artisan cheeses and Baillet’s charcuterie and cured meats complement each other, reflecting the rich flavours of the Basque-Chalossais region. Together, they uphold centuries-old traditions while embracing modern techniques, symbolising the collaborative spirit of the Basque country.
